GF Crockpot Stufing

I relied on Stove Top stuffing until we had to go GF . I find gluten free stuffing to be better than “regular” stuffing which I believe is from how dry the bread is to begin with.

 

GF Crockpot Stuffing

1 cup butter

2 cups chopped onion

2 cups chopped celery

3 Tbsp dried parsley

2 cups diced mushrooms

12 cups gluten free bread, cubed

1 1/2 tsp dried sage

1 tsp dried thyme

1 tsp salt

1/4 tsp pepper

1/4 tsp garlic powder

2 eggs

up to 3 cups prepared GF chicken broth (I use Orrington Farms Chicken Base)

 

Melt butter over medium heat in a large skillet. Add onion, celery, mushrooms, parsley and saute for about 3 minutes. In a large bowl mix the bread, spices, and the sauteed veggies. Then, add the eggs.

Transfer the mixture to a greased 5 qt greased crockpot. Pour one cup prepared broth over stuffing. Cook on low for 6 hours. Stir every hour or so, adding broth as needed if it looks dry.

 

GF Chicken Nachos

An easy meal.

The recipe was inspired by a from a recipe in “Don’t Panic, Dinner’s in the Freezer” by Vanda Howell, Suzie Martinez, and Bonnie Garcia. Their cookbook gives you techniques and great recipes for cooking in bulk and freezing meals. GF Chicken Nachos

3 lb. boneless, skin less chicken breast, cut into bite sized pieces
24 oz GF salsa
1 can black beans, rinsed and drained

8 oz Greek yogurt, unflavored
Tortilla chips
Cheddar cheese, shredded
Lettuce, shredded

In crockpot, combine chicken, salsa, and beans. Cook on low for 8-10 hours.

Add the yogurt. Allow to heat through. Then, lay out chips on a cookie sheet. Top with chicken mixture and the cheese. Bake at 350* for 7-10 minutes until cheese is melted.

Top with lettuce to serve.

GF Tamale Pie

Yum, this is one of our favorite recipes! It cooks in the crockpot all day and makes your house smell delightful!

This recipe was adapted to gluten free from a Taste Of Home Slow Cooker Tamale Pie. I don’t usually cook dairy free and gluten free, but tonight we were cooking for a friend that does need both- so I adapted this recipe further. This recipe makes about 8 servings- so it’s a great meal to share.

GF Tamale Pie

1 lb. ground beef
1 tsp cumin
1/2 tsp salt
1/2 tsp chili powder
1/4 tsp pepper
1 can black beans, rinsed and drained
1 can Rotel
1 can corn, drained
1 (10 oz) can red enchilada sauce (read labels carefully as some brands are not GF)
2 green onions, chopped

1 GF Cornbread Mix (I recommend Pamela’s because it is sweeter than the others)
-follow directions on box for ingredients. Tonight I used Hodgson Mills and as directed added 1 cup almond milk (to keep dairy free), 2 eggs, 1/2 cup canola oil to the cornbread mix.

Brown ground beef in a skillet until fully cooked. Add the cumin, salt, chili powder, and pepper to the meat and then place in a large, wide crockpot. Add the black beans, Rotel, corn, enchilada sauce, and green onions. Stir it all together and then cover and cook on low for about 7-8 hours. If you are home, stir occasionally – but if not, just stir before adding the cornbread mix to the top.

An hour before you are ready to eat, mix the cornbread together in a separate bowl- according to package directions. Pour the batter on top of the meat mixture in the crockpot. Continue to cook on low for 1 more hour or until a knife comes out of the cornbread clean.

If desired, when serving, sprinkle with some cheddar cheese and a dollop of sour cream- but only if you can have dairy.

GF Split Pea Soup

Tonight we are having Split Pea Soup. It has been a family favorite for years- and it is also naturally gluten free. I make it in the crockpot which also makes it a very easy meal.

Split Pea Soup

16 oz dried split peas
1 onion, diced
1 carrot, chopped
1 celery stock, chopped
1 tsp salt
1/4 tsp pepper
2 quarts of water
1 ham shank or hock

Place all ingredients in the crockpot. Cook on low for 8 hours. In the last hour or so of cooking remove the bone and tear off eat. Place the ham meat back in the crockpot and heat for a while longer. Serve with gluten free cornbread ( we use Pamela’s or Bob’s Red Mill mixes).
