GF Italian Sausage Bread

I use my GF French Bread recipe as a base for this filling bread.

GF Italian Sausage Bread


1/2 onion

1/2 green pepper

8 oz cream cheese

1 lb. Italian sausage, crumbled

1 loaf GF French Bread (see recipe below)

 

In a sauce pan, brown sausage with onions and green pepper. When sausage is no longer pink, add cream cheese. Cook over medium heat until cream cheese “melts” into sausage mixture. Slice bread in half horizontally, and then spoon meat mixture into between bread halves. If the bread was not warm to start with, cover in foil and heat at 425* until heated through- about 20 minutes. If the bread is fresh from the oven, no need to heat through.

Slice in regular slices to serve.

 

This French bread recipe yields a light, velvety, delicious bread- even if you can eat “real” bread you won’t want to pass it up. I use this dough base for a variety of breads (bread bowls, dinner rolls, French bread).

GF French Bread

1 cup warm milk (heated in the microwave for about 1 min)
1/2 cup warm water
2 tbsp sugar
1 packet dry active yeast
2 cups rice flour
1 cup tapioca flour
3 tsp xanthan gum
1 1/2 tsp salt
1 egg yolk
2 tbsp olive oil
1 tsp vinegar
3 egg whites, slightly beaten

Olive oil
Poppy seeds
Minced onion
Sea salt

Directions:
1. In a small bowl, combine warm milk and water. Stir in sugar and yeast. Set aside until it begins to foam (10-15 minutes). Preheat the oven to 200*- once it reaches 200* and before placing the dough in turn it off. You are just creating a warm place for the dough to rise.

2. Combine flours, xanthan gum, salt, and egg yolk into the Kitchen Aid mixing bowl and blend briefly on low.

3. Once the yeast mixture foam, mix it into the flour mixture. Then, add oil, vinegar, and egg whites. Beat on high for 3 minutes.

4. On a cookie sheet with a silicone mat or on a large pizza stone (my preference) shape two loaves. I use a glass of water to dip my spatula in so the dough doesn’t stick. Use the spatula to shape the loaves.

5. Brush the loaves with olive. Then sprinkle with sea salt, poppy seeds, and minced onion.

6. Place the dough in the preheated and turned off oven. Allow to rise for 1 hour.

7. Then bake at 375* for 45 minutes.

GF Barbecued Pork Sandwiches

A great recipe to feed a crowd!

GF Barbecued Pork Sandwiches

1 boneless pork shoulder butt roast
Salt
Pepper
Splash cider vinegar

Sauce:
1 onion, diced
1 Tbsp. butter
1 can tomato sauce
1/2 cup brown sugar
1/4 cup Worcestershire sauce
2 Tbsp. lemon juice
1/2 tsp salt

Place roast in crockpot and season with salt, pepper, and cider vinegar. Allow to cook on low for 8 hours.

About 30 minutes before serving time, prepare the sauce. Sauté the onions in butter until tender. Add remaining ingredients and bring to a boil. Reduce heat and allow to simmer for 30 minutes.

Shred pork, add sauce to pork and heat through. Serve on GF Buns (Udi’s).

GF Farmer’s Casserole

I recently participated in a meal swap- and our dinner tonight was a meal I received. The smell filling my house is mouthwatering!

The recipe came from a recipe in “Don’t Panic, Dinner’s in the Freezer” by Vanda Howell, Suzie Martinez, and Bonnie Garcia. Their cookbook gives you techniques and great recipes for cooking in bulk and freezing meals. GF Farmer’s Casserole

24 oz bag frozen hash browns
3/4 cup monterey jack cheese, shredded
3/4 cup cheddar cheese, shredded
1 cup diced ham
4.5 oz can diced green chillies
1/4 cup diced green onions
4 eggs, beaten
1 can evaporated milk
1/4 tsp pepper
1/4 tsp salt

Grease a 9×13 pan and then spread out potatoes evenly. Top potatoes with cheese, ham, green chillies, and onions. In a bowl, mix together remaining ingredients and then pour over casserole. Bake uncovered for 45 minutes or until set and slightly browned.

GF Pork Tenderloin

We had dinner at a friend’s house tonight (a non gluten free family). They cooked a delicious meal for us- all completely gluten free and out of their pantry. I am very pleased with Hormel as a company. They often label items as gluten free and have many meat products that don’t contain gluten.

Main Dish:
Hormel Pork Center Cut Loin Filet Mesquite Barbecue (labeled as GF)

They grilled it as directed on the package but check after 25 minutes because tonight it finished faster than the package listed. Also, adhering to the 10 minute rest period will ensure it finishes cooking and it will stay moist.

Side Dish:
Asparagus
1 bunch asparagus, washed and ends trimmed
Fresh ground ground black pepper
1 tsp Lawry’s Season salt
6 cloves Garlic, minced
Olive oil

Lay asparagus in a large piece of foil. Sprinkle with season salt, pepper, garlic, and olive oil. Fold the ends of the foil to completely seal the asparagus inside and not leak out oil. Turn to evenly coat. Place on the grill in direct high heat, flipping once for 10-15 minutes or until tender crisp. Season with salt and pepper on the plate.

Mashed Potatoes
1 package Idahoan Roasted Garlic & Parmesan Baby Red Mashed Potatoes (labeled GF)

Made as directed on package.
