GF Chicken Wings

Just in time for Super Bowl parties! Here is a fantastic chicken wing recipe. This comes from Grandma Ward’s recipe box! Sure to be a crowd pleaser! This recipe didn’t start out gluten free but is easy to switch over – just be sure to use GF soy sauce and chicken broth.

 

GF Chicken Wings

1/4 cup oil

1/2 cup GF soy sauce

1/2 cup chicken broth

3 Tbsp white sugar

3 Tbsp brown sugar

1 tsp dried ginger

2 cloves crushed garlic

5 lbs raw chicken wings

 

Combine all ingredients and coat well. Bake on a cookie sheet for one hour at 350º.

GF Hummus

My sister gave me her homemade hummus recipe after I was literally eating it by the spoonful until I had emptied the bowl.

GF Hummus
2 cloves garlic
1 can garbanzo beans, drained but reserving liquid
1 1/2 tahini
3 Tbsp olive oil
1 Tbsp canola oil
1 1/2 Tbsp lemon juice
1/2 tsp salt
1/2 tsp pepper

Combine all ingredients in a food processor and purée until smooth. Add reserved bean liquid to achieve desired consistency (today I added 2 Tbsp).

Serve with tortilla chips or carrots or any item you wish.

GF Frittata Bites

Frittata bites look fancy, but are easy to make! I found this recipe in a recent King Soopers mailer. I thinly sliced ham off the ham last night to add to these frittatas.

GF Frittata Bites

8 eggs
1/2 cup milk
1/4 tsp salt
1/2 tsp pepper
1/2 cup finely sliced ham, chopped
1/3 cup GF Parmesan cheese, grated
2 Tbsp fresh basil, chopped
1 Tbsp fresh chives, cut into 1/4 inch pieces

Whisk together eggs, milk, salt, and pepper. Then, add remaining ingredients. Generously coat 2 mini muffin tins with GF non-stick cooking spray. Fill each cup 3/4 full. Bake each tray for 15 minutes or until egg is set and frittatas have puffed. Continue until egg mixture is gone- making sure to reapply cooking spray between batches. Makes about 35-40 bites.

Serve immediately or refrigerate for later. To reheat, bake at 325* for 5-7 minutes.

GF Party Snacks

Super Bowl parties are all about the food- at least for me! It is easy to make gluten free party snacks. Here is a smacking have what we brought to a party tonight.

Apple Dip

This recipe is one my mom’s from years ago. It came from “Recipes for Multiple Taste Buds”.

1 package cream cheese, softened at room temperature
3/4 cups brown sugar
1/4 cup white sugar
1 tsp vanilla

Cream ingredients together in a mixer. Serve chilled with sliced apples.

I also made Chocolate Chip cookies from Pamela’s Baking mix. I followed her recipe on the bag.
