GF Crockpot Stufing

I relied on Stove Top stuffing until we had to go GF . I find gluten free stuffing to be better than “regular” stuffing which I believe is from how dry the bread is to begin with.

 

GF Crockpot Stuffing

1 cup butter

2 cups chopped onion

2 cups chopped celery

3 Tbsp dried parsley

2 cups diced mushrooms

12 cups gluten free bread, cubed

1 1/2 tsp dried sage

1 tsp dried thyme

1 tsp salt

1/4 tsp pepper

1/4 tsp garlic powder

2 eggs

up to 3 cups prepared GF chicken broth (I use Orrington Farms Chicken Base)

 

Melt butter over medium heat in a large skillet. Add onion, celery, mushrooms, parsley and saute for about 3 minutes. In a large bowl mix the bread, spices, and the sauteed veggies. Then, add the eggs.

Transfer the mixture to a greased 5 qt greased crockpot. Pour one cup prepared broth over stuffing. Cook on low for 6 hours. Stir every hour or so, adding broth as needed if it looks dry.

 

GF Deviled Chicken

We found this recipe in a Taste of Home magazine years ago. We were delighted to find it is already gluten free! Tonight we served it with white rice boiled on the stove top Cornwall chips (See next post). Here is a link to the actual recipe on Taste of Home’s website Deviled Chicken

Deviled Chicken

6 chicken leg quarters
1/4 cup melted butter
1 Tbsp lemon juice
1 Tbsp French’s mustard
1 tsp salt
1 tsp paprika
1/4 pepper

Place the chicken quarters in a large glass baking pan. In a small bowl, combine the remaining ingredients and then pour over chicken. Bake, uncovered at 375* for 50-60 minutes or until chicken is no longer pink. Bast chicken occasionally while cooking.

GF Party Snacks

Super Bowl parties are all about the food- at least for me! It is easy to make gluten free party snacks. Here is a smacking have what we brought to a party tonight.

Apple Dip

This recipe is one my mom’s from years ago. It came from “Recipes for Multiple Taste Buds”.

1 package cream cheese, softened at room temperature
3/4 cups brown sugar
1/4 cup white sugar
1 tsp vanilla

Cream ingredients together in a mixer. Serve chilled with sliced apples.

I also made Chocolate Chip cookies from Pamela’s Baking mix. I followed her recipe on the bag.
